It came out of no where and hit me like a ton of bricks—I needed to bake something! I tend to get this craving when life is hectic. This time I was recently unemployed, we had just gotten back from vacation, and signed a lease on a new apartment—life was definitely hectic. My kitchen didn’t get much use this summer, so this batch of cookies on a quiet morning was the perfect way to say goodbye to my first ever apartment. I saw this recipe floating around Pinterest and since I had everything in my pantry, I got to work.
Now, cookies have always been a baking weak spot for me. Cakes, breads, pie, tarts, brownies—no problem. My cookies tend to turn out super wet and I end up dumping tons of flour into them and when they come out, their mediocre at best. But not these cookies. I even forgot the vanilla and eggs and added them after the dry ingredients and they turned out great. Chewy, flavorful, soft, delicious. Seriously the best ever.
